Forest Ranger Cookies

"Elijah, do not eat any of the cookies before Mummy took a picture."

FOREST RANGER COOKIES


Yield: 24 to 32 cookies


Ingredients:

  • 1 cup soft butter

  • 1 cup white sugar

  • 1 cup brown sugar

  • 2 eggs

  • 1 tsp baking powder

  • 1 tsp baking soda

  • 1 tsp salt

  • 2 cups flour

  • 2 cups oatmeal

  • 1 cup dried cranberries

  • 3/4 cup chocolate chips

  • 1 tsp vanilla extract (optional)

Instructions:

  1. Preheat the oven to 350° F and lightly spray a baking tray with oil or place baking parchment.

  2. Add the egg, butter and both sugar to a large mixing bowl, and whisk until well combined. Set aside.

  3. Add the vanilla extract to the same bowl if using.

  4. To another bowl, mix together the flour, baking soda, baking powder and salt. Slowly scoop the dry mixture into the wet mixture, and stir until just combined.

  5. Add the oatmeal, dried cranberries and chocolate chips to the bowl.

  6. Spoon batter onto the prepared baking tray. I use a 1/4 cup as a measuring tool; it makes big chewy cookies, just the way we like them!

  7. Bake for about 8-15 minutes at 350° F. It honestly depends on your oven and the way you like your cookies. In the trailer, we have to cook them for 15 minutes. At home, we used to bake them for 10. Transfer to a cooling rack until completely cool.

Tip:

These cookies are delicious frozen! I usually freeze half of the batch, otherwise they don't last a week in our house...
